Hai frenz. I posted this on my insta and a bunch of y'all asked for the recipe. I figured I should share it. However,  you should know that I 100% made this up and I am not a chef so don't get all food network critics on me.You can make this bomb ass rainy day soup two ways. You can make it to be Whole30 compliant, or you can just make it how you would normally make it if you aren't torturing yourself with a whole30 sentence.Here's what you'll need:

  • Shrimp (I prefer fresh, or one bag of Argentinian shrimp from Trader Joe's)
  • 2 cans of coconut milk -- Goya, or Trader Joe's sells a sugar-free one
  • Curry powder
  • Cayenne pepper
  • Garlic
  • Spinach
  • 2 Potatoes
  • 21-day seasoning salute from Trader Joe's
  • Coconut oil
  • Salt
  • Mushrooms (optional)
  • Cilantro (optional but I put that shit on everything)
  • Cashews (optional)

Here's what you're going to do (loosely):

  1. Toss your *clean* shrimp in a bowl. Add minced or mashed garlic. Toss in some minced cilantro. Salt, 21-day seasoning salute, Curry, & cayenne pepper to taste. Mix that all together and let it marinate while you make your soup base.
  2. In a soup pot pour in your coconut milk, some curry (I use like a thousand tablespoons of curry aka I just pour it in) to taste, diced potatoes, mushrooms and cayenne pepper. Do this all to your personal taste preference. But we haven't added salt yet so it's gonna taste a little funny. Let your base cook while you cook your shrimp.
  3. In a separate pan, saute your shrimp in a bit of Olive oil, or coconut oil if you're whole30-ing.
  4. Once that's cooked, add your shrimp to your soup base and let the flavors blend on medium heat for like 5 min. Or however long it takes you to check your snapchat, facebook, IG, snapchat again and insta.
  5. Taste + make sure you like the salt levels.
  6. Add a handful or two of *clean* spinach.
  7. Cook for like 2 min.
  8. Pour yourself a bowl and garnish with cilantro + crushed cashews. Or not.
  9. Eat

So yeah. That's a hella loose recipe because, a) I'm bad at measuring stuff and b) I was poor one day and only had those ingredients and so the above happened. I don't know how many it feeds. I usually just add more ingredients if there are more people. It's a good soup. I sent my family a threatening text message so that they save me some. Because even my rice, beans and chicken everyday family loves this.Enjoyxooh, ps you can substitute the shrimp for chicken.k bai.
